Banana Walnut Bread and preparing seaweed

there's something about being trapped inside my house because of a blizzard that gets my baking drive going. i woke up at 7 am because i was dying to find out if my bananas had finally ripened. and success! so here's some yummy love if you're stuck in a blizzard (if not, it's such nutty deliciousness that you can still enjoy it) i tell myself it's okay to have this much bread around the house to graze on b/c it's made of whole wheat flour and oats. and if that doesn't work, there's a nice freezer that can easily take some bread lovin. see recipe at end of entry.

today i also helped the mother to prepare some dried seaweed for some salty goodness. it's very simple and straightforward procedure. take some dried seaweed, rub in sesame oil and then sprinkle lightly with salt.once that's all done you cook it up on the stove. one by one place it in the pan to cook up (there is a way to cook in the oven, but this is the way my mother likes to do it).it starts out the dark blackish color and then when it's fully cooked it turns a beautiful green like so. have with rice and side of kimchi and egg and it's a delicious meal!

Banana Walnut Bread
1 cup whole wheat flour
1 1/2 cup instant oats
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup brown sugar
1/2 cup applesauce
2 eggs
5 ripe bananas, mashed
1 cup walnuts, chopped

Preheat oven to 350 degrees F. Grease and flour one loaf pan.

In a medium bowl, mix flour, oats, baking powder, baking soda, and salt. Set aside.

In a large bowl mix together brown sugar and applesauce. Add eggs one at a time. Add mashed bananas. Slowly stir dry mixture into the wet ingredients until combined. Add the walnuts, stir up and pour/scoop into bread pan. Bake for about 58 minutes or until done. yum!
