this recipe comes from joy the baker. i halved the recipe and made cupcakes instead! if you didn't notice the mideast is going to a bit of a blizzard so this gives me plenty of opportunities to bake! i used the metal cupcake tins and sprayed with oil then lightly dusted each with some unsweetened cocoa powder (whoooeee, this takes some patience. i think it might help to sift it over the cupcake tins)
the mashed avocado came out to be such a beautiful color! the cupcakes are delicious but i think b/c i haven't had granulated sugar in awhile it took me a bit to get used to the after sweetness. i might try again with some applesauce next time. but these are good! hopefully i will get around to making the avocado buttercream icing.
